This Decaf sugarcane process lot completely redefines what decaffeinated coffee can be, delivering a rich, indulgent profile that easily competes with fully caffeinated specialty offerings. The dry aroma is inviting and sweet, bursting with brown sugar, toasted graham cracker, and milk chocolate. On the palate, a lush wave of dark honey, caramelized sugar, and crisp red apple takes center stage, supported by a smooth, round body and gentle citric acidity. The finish is exceptionally clean and lingering with a rich cocoa sweetness.
The decaffeination is achieved using ethyl acetate naturally derived from local Colombian sugarcane, a process celebrated for enhancing sweetness while removing 99.9% of caffeine. Green coffee beans are first steamed under low pressure to open their cellular pores and swell the seed. They are then submerged in a solution of natural EA produced through the fermentation of locally grown sugarcane molasses. The natural compound selectively binds to caffeine molecules, gently extracting them without stripping away the coffee's delicate aromatic compounds, organic acids, or natural sugars. Once the caffeine is removed, the beans undergo a thorough water wash to rinse away any remaining solution before being dried back down to optimal moisture content on gentle drying tables.
Sourced from smallholder farming families across the fertile Valle del Cauca region, this coffee thrives along the western slopes of the Andes mountains. Nestled between the Cordillera Central and Cordillera Occidental ranges, the region benefits from nutrient-dense volcanic soils, consistent rainfall, and steady equatorial temperatures. Local producers hand-select fully ripe, high-density cherries grown at high elevations before processing them at centralized wet mills. By sourcing ethyl acetate locally from sugarcane grown in the same valley, the decaffeination process remains rooted in regional sustainability, giving coffee lovers a chemical-free, hyper-local decaf that preserves the true terroir of Colombian coffee.
